Upon arriving in U.S. industrial centers, Italian immigrants found that beef, pork, poultry, eggs, and dairy—items strictly rationed or expensive back home—were abundant and affordable. Reacting to this newfound purchasing power, Italian-American cooks transformed traditional recipes into much heavier, heartier dishes. Throughout this shift into abundance, fresh, quality, scratch-made ingredients stayed central, and we aim to carry that tradition in our kitchen everyday.

The origin of tortellini is disputed; both Bologna and Modena in the Emilia-Romagna region of Italy, claim to be its birthplace. Traditionally stuffed with a mix of meats, it's become increasingly common to encounter them stuffed with cheeses and herbs.

Our current iteration is cheese-filled in a parm and provolone sauce, served with agrodolce arugula, and ready to meet that pasta craving.
