We're excited about the roast this weekend: Guatemala Atitlán – Los Volcanes.
It's a washed coffee grown on the volcanic slopes around Lake Atitlán, offering
a cup centered on rich chocolate and cocoa, balanced by bright red apple and stone-fruit sweetness. A subtle floral–spicy lift adds complexity, while a smooth, sweet finish rounds out the profile, making it ideal for highlighting chocolate and fruit notes in both pour-over and espresso. This is a great cup and one that you don't want to miss.

Roasting this weekend: Peru Amazonas

Peruvian coffees are known for being exceptionally clean and smooth, and this microlot from the Amazonas region lives up to that reputation. Grown by a certified organic and fair trade co-op called San Ignacio Rio Amoju near the start of the Amazon River, this offering provides village farmers with purpose and opportunity through sustainable practices.

The beans have been carefully sorted and roasted to highlight their rich, satisfying milk chocolate and hazelnut flavors. You'll find a smooth, sweet, and clean profile in a lighter roast, but we especially love taking this one a little darker to bring out notes of a rich fudge brownie with nuts. It's a mellow, easy-drinking coffee you can enjoy all day!

Roasting this weekend: Colombia Tabi—a vibrant coffee from the famed Huila region. “Tabi” means “good” in the language of Colombia’s indigenous Guambiano people, and it truly lives up to the name.
Developed from Typica, Bourbon, and Timor Hybrid, Tabi pairs natural leaf-rust resistance with excellent cup quality. This medium roast offers caramel, red fruit, and chocolate notes, balanced by clean citrus acidity and a silky body. Look for hints of orange, apple, creamy sweetness, and a floral aroma. We may take this one just a touch darker for the cooler weather.

**Side note: we have a baby bean (baby) due any day now so roast dates may need to be flexible, but we'll get it to you.

This weekend we will be roasting a bright, light Ethiopia Gugi Kayon Mountain Natural Process. The Guji Region is one of the most remote coffee regions, but also produces some of the most legendary coffees. This is a natural processed coffee to accentuate the floral and sweet tastes of this Ethiopian bean.

They grow Typica varietal and it really brings out more floral notes than fruity notes, but there is definitely citrus and tangerine with slight backberry notes but also perfumed aroma and flavor that takes you to a flower garden. We plan to roast this bean light in order to best enjoy them. But, it makes a great medium roast as well if you prefer. If you have never branched out of your coffee comfort zone, this would be a great one to try!

Burundi Tangara – Ngozi, is a smooth washed process African coffee with a rich chocolate foundation and a touch of dried-fruit brightness and a slight savory finish. Roasted medium to medium-dark, it makes an especially satisfying everyday cup for drip, French press, or espresso. It's a special choice for my birthday weekend!

This week's roast is Sumatra Mandheling Aceh Harimau Tiger, Grade 1. This double-pick lot offers classic Sumatran body with a cleaner cup than typical Mandheling — think straight chocolate sweetness, hints of soft fruit and citric brightness, balanced by a good earthy spice. Roasted dark, it moves into a fuller-bodied, low-acid cup with roasty, baker's-chocolate notes, and like most wet-hulled coffees, it tastes best after resting 24 hours or more. I tried some last weekend and it was some of the best dark roast I've ever had.

This week we’re roasting two coffees: Ethiopia Sidama Durato Bombe, and Costa Rica La Amistad. Both are organic certified. The Ethiopia has a stronger fruit forward profile and the Costa Rica has more mild sweetness. Each are excellent.

Grown in the Sidama region, this Ethiopian lot benefits from ideal altitude and careful processing, resulting in a clean, articulate cup. Expect a structured acidity with notes of blueberry, bergamot, and soft florals, supported by a tea-like body and a refined, honeyed sweetness.
Compared to heavier, chocolate-driven profiles, Durato Bombe is all about transparency and nuance—each sip reveals layered fruit and floral characteristics with a crisp, elegant finish.

We’re approaching this with a controlled medium roast to preserve its aromatic complexity while slightly extending development to round the acidity and enhance sweetness. This makes it versatile across brew methods while still shining in pour-over or drip.

This week’s roast is Nicaragua El Diamante, a smooth and balanced medium roast from the highlands of Jinotega. Grown in rich volcanic soil, this coffee offers bright stone fruit notes, honey-like sweetness, and a clean finish of milk chocolate and roasted almonds.
We’re roasting it to medium to highlight its natural sweetness and silky medium body, making it an easy choice for both morning and afternoon cups.

This weekend we are roasting two coffees: 1) Costa Rica La Armistad and 2) Organic Bali Blue Moon. "Both are available this weekend, but the Costa Rica drops to $15/bag if you sign up to get it every two weeks.

Bali is a small island in Indonesia. These beans will taste similar to other coffees from Indonesia, but have more complexity and less earthiness and bitterness. The low acidity lends to a smooth body, strong chocolaty tones, and hints of syrup and vanilla. They will be roasted medium-dark. All of the coffee grown in Bali is organic, because pesticides, insecticides and chemical fertilizers are strictly forbidden on the island.
