When neuroscience meets fermentation

Last tuesday we had the pleasure of collaborating with UCSB, Professor Matthieu Louis as part of his Neuro-gastronomy course — the science of how the brain perceives flavor.

Through a panettone tasting, students explored how smell, taste genetics, and texture shape our sensory experience. We brought the baker’s perspective: fermentation, crumb structure, aroma development, and how texture drives flavor perception.

For us at Bree’Osh, this dialogue between science and craft is essential. Fermentation is not only tradition — it is a living system that shapes how we experience food.

It also reinforces a vision we’ve been developing in Santa Barbara: creating a place where fermentation, grain science, and sensory research meet artisans, chefs, and hospitality professionals.

As we close out 2025, we want to take a moment to say thank you.

Thank you to our customers and our wider community for your trust, your thoughtful conversations, your feedback, and your daily support throughout the year. Your words, discussions, and engagement inspire us to do better every single day, and we are truly grateful to be part of a community that cares and grows together.

This year was an important one for us. In 2025. We celebrated our 10 anniversary. We proudly achieved several milestones that reflect our commitment to quality and transparency. We transitioned to using 100% French flour in our breads ( ), and we adopted non-inflammatory oils across both our cook line and our bakery, aligning our practices even more closely with what we believe good food should be ( , , )

We were also honored to represent our work on an international stage. This year, we participated in the U.S. selection of the Coppa del Mondo del Panettone in Las Vegas, and we attended the Panettone World Championship in Milano - Italy, experiences that challenged us, inspired us, and pushed us to improve and grow.

All of this reinforces why we do what we do. We are proud to continue being a true alternative to mass-produced baked goods—choosing craftsmanship, care, and ingredients we trust. Your support makes this possible.

None of this would be possible without the dedication of our incredible staff and the continued partnership of our suppliers. Your hard work, creativity, and commitment to excellence made 2025 a year to remember, and we are deeply thankful for everything you do.
