I have a private dinner coming up soon. I am doing an appetizer flight and one of the three bites is a caprese salad. Here is the mozzarella I am using. I made the cheese and then poured into these molds. Will need to pour quicker and tap the molds better and would trim the little extras sticking off but otherwise, what does everyone think?

Braised tofu over mashed potatoes and pan gravy. With a side of roasted veggies

Lentil pie with dairy free mozzarella. Served with a marinara. Yummy!
