One and a half times the usual amount, so 30 pounds of chicken thighs, 20 # andouille sausage and 18 # of shrimp will be added to this 40 # of okra, peppers, onions and celery along with the pound of fresh garlic, 22 # of tomatoes, 5 gallons chicken stock, 30 bay leaves and 10 cinnamon sticks.
