This is how I roll. Grape leaves (warek enab) the vegetarian ones, there is a meat version too.

Peel and cut your carrots. Line the bottom of the pan with them so the grape leaves don’t stick while cooking.

Grape leaves - trim the stems (because they are hard)

Stuffing inside the grape leaves - chopped parsley, tomatoes, onions, rice, mint, lemon juice, olive oil, salt, pepper

Portion about a tablespoon or more on each leaf towards the top. The amount depends on the leaf. They’re not all the same size.

Fold the sides in and roll!

I squeeze them a little to let out some juice and then line them in the pan, nice and tight. This is important, otherwise they may come apart.

I lay a plate on top while cooking. There are special plates made for this that you can buy but this is all I had at home.

Mix tomato paste and water to create the liquid they’ll cook in. You can season this a little with salt. Pour into the pan. Press your plate down so keep them in place.

Cover with lid. Bring to boil and then turn down heat to a simmer and cook for 1.5-2 hours. I cooked mine for 2 hours.

Ready to eat. Enjoy! ☺️ 😋♥️

A day in the life of a food vendor— when everything is stocked beyond your 5’2.75” reach and is two deep in and now I gotta climbs shelves without getting caught. Happy Friday everyone!! Today is a good day to visit and support your small business. We had a hell of a start to the week with losing power. But, we’re all back at it and ready to see you! 😊🙏♥️
