It’s Friday , the AC is pumpin’ and summer is in fulll swing here in the Midst8!!! Beautiful vegetables, fruits and herbs fill the stands and here at the Taqueria , we have followed suit with some beautiful specials , which are very simple , but very delicious !
For the vegetarian special , ( probably for the last week, considering the heat ,.) is wood oven roasted PA asparagus , freshly pickled and tossed with extra virgin olive oil and kosher salt and roasted on a hot tray .
They can be served as a taco or a sope or on a taco salad or Whatever ! For the tacos , they are served with pickled red onions , queso fresco and salsa picosa. And this begins the countdown to corn tacos -and elote❤️!!!
For Protein specials, we have a little Beef Barbacoa left -locally sourced beef chuck roast , cooked low and slow with cider vinegar , avocado leaves , garlic cloves and guajillo chilis until fork tender , then shredded. Served with finely chopped yellow onions, cilantro chiffonade and salsa picosa.
But ,,,BUT.., hang onto your hats because we also have beautiful local crispy pork belly
today !!!!( pictured below )
Cured with salt , sugar snd freshly ground pepper and
par roasted and then rested and then this morning , crisped just before lunchtime . For the taco special , they are being served with a cilantro chiffonade, yellow onions and salsa verde.
For tamales , we have poached chicken in a salsa berde, wrapped in banana leaves and steamed .
And last but not least , Flan !
we are down already to a
few black 🍒 with amaretto..
