We built The Bass Line in honor of Sounds of the Zoo and the local artists who keep this city loud. Tito's vodka and Patrón Citrónge meet lemon basil cordial, lavender, and orange bitters, with Ancho Reyes bringing a slow-building warmth, like the groove that gets everyone moving.

Peruvian Chicken Curry is on the menu, and the secret is the pepper.

Aji amarillo is Peru's signature chile: sunny yellow, fruity, and warm without setting your mouth on fire. Blended with cream and tomato, it's the base of aji de gallina, Lima's comfort-food classic. Ours brings that sauce over shredded chicken tinga and cilantro rice, finished the traditional way with egg and olives, then adds a Roca twist, with smoky ancho alongside the tinga.
