Lamb, dry-aged beef, caramelized onions and
quesillo packed into pita, then pressed on the grill until the outside crisps and the inside goes soft.

Quesillo is Oaxacan. The pita from the Med. It
works together and is full of flavor.

Castacán en Mole. 🌶

Pork belly, mole casero, gooseberries, chicharrón - deep, bittersweet, built in layers.

The chicharrón shards are there to be broken and dragged through it because we love using our hands.
