Meet Tomoyuki Hayashi, Executive Sushi Chef of .⁠

With more than 25 years dedicated to the discipline of Edomae sushi, Chef Hayashi brings a career defined by precision, restraint, and deep respect for tradition to the Mujō counter.⁠
⁠
Raised in Fujieda, Shizuoka Prefecture, his path has taken him from a traditional apprenticeship in Tokyo to some of New York City’s most distinguished sushi counters, including Michelin-starred sushi AMANE and Sushi Azabu.⁠

In 2025, Chef Hayashi joined Mujō alongside longtime friend Executive Chef J. Trent Harris, guided by the Japanese concept of *en* — the invisible threads that connect people through chance, shared history and fate.⁠
