We’re finishing the year with Seafood Marinara, and trust us, you don’t want to miss this one. 👀 Marinara sauce can be tricky to get right, so Richard is sharing his tips for keeping it rich, full of flavour.

This week at Chef Richard’s Pasta Club, we’re serving up Pasta alla Zozzona - the gloriously messy love child of carbonara and amatriciana.

Think silky egg, pecorino and crispy guanciale meets rich tomato, sausage and basil. Rich, indulgent and unapologetically messy to make.

Cristiano Pa***ca and Richard Ptacnik are back in the OTTO kitchen, bringing their ideas together for A Homecoming By Fire II on Thursday 29 October.
 
From testing dishes to tasting, tweaking and throwing a few ideas around, we sneak a peak at the chemistry behind the scenes.
 
The result? A four-course sharing menu celebrating fire, flavour and two good friends cooking together.

The shoemaker’s pasta, Spaghetti alla Scarpariello 👞✨
 
This week at Pasta Club, we’re serving up a Neapolitan classic with a pretty great backstory.
 
Legend has it that local shoemakers (scarpari) were sometimes paid in cheese instead of coins - inspiring this rich, glossy pasta loaded with cherry tomatoes, garlic, fresh basil and an aggressively generous amount of Pecorino and Parmigiano 🧀
 
And because it’s officially , we’re giving you permission to break the rules. Swap your usual w**e for a bubbly Negroni Sbagliato - Campari, sweet vermouth and Prosecco.
