TRUFFLE SEASON HAS ARRIVED. 🍄✨
And after months of anticipation, we’re finally ready to share what we’ve been working on.
Starting Monday, Semola will officially launch our Truffle Degustation Experience 👏🏽 a six-course journey celebrating one of the world’s most treasured ingredients, built around premium fresh truffles sourced from the Village of Poplars in Bredbo, just outside Canberra.
For us, truffle season isn’t simply about adding shaved truffle to a dish. It’s about creating an experience around it. The aroma, the craftsmanship, the wine pairings, the conversations shared across the table and the fleeting nature of a season that only comes around once a year.
Over six carefully curated courses, you’ll move through some of our favourite creations, each designed to showcase fresh Australian truffle in a different way.
Think porcini and truffle arancini with parmesan chips.
Five-day fermented focaccia served warm with house-made truffle butter.
Wagyu Tartufato with cured egg yolk, parmesan and truffle mayo.
Provolone al Forno with honey, walnuts and toasted focaccia.
Our signature Tagliolini Uovo e Tartufo — handmade pasta finished with parmesan, confit egg yolk and generous shavings of fresh truffle.
And, of course, a chef’s special finale to finish the experience.
For those looking to take things even further, each course can be enjoyed alongside carefully selected wine pairings, chosen to complement and elevate the unique character of every dish.
This menu is a celebration of the relationships we’ve built, the producers we proudly support, and the incredible quality of Australian truffles being grown right here on our doorstep.
