☕ Coffee School Wednesday

Your espresso tastes wrong, but you can’t say why. Let your tongue tell you what to change.

Sour, sharp, a bit salty? That’s under-extraction. The water ran through too fast. Grind finer.

Bitter, dry, harsh on the finish? That’s over-extraction. The water lingered too long. Grind coarser.

Start with a simple recipe: 18g of coffee in, 36g of espresso out, in roughly 25 to 30 seconds. That’s your baseline, not a rule.

Then follow three habits:
1️⃣ Change only ONE thing at a time. Grind first, always.
2️⃣ Make small adjustments, one notch on the grinder.
3️⃣ Weigh everything and taste after every shot. Write it down.

Fresh beans change too. A bag that dialled in perfectly last week may need a small tweak this week. That’s normal, and it’s part of the craft.

Dialling in is a skill, not a mystery. Ten shots in, you’ll start to feel it.
