Industry-grade reverse osmosis filters alone are not sufficient to fully run a coffee shop in a boil notice! We hope that our post yesterday did not give the wrong impression that this is all it takes. There are additional steps which we have had to take to ensure safety throughout this advisory. We are still in the kitchen boiling giant pots of water to use for handwashing, rinsing steam pitchers, etc. The ice that we are using is bagged QuickTrip ice that our retail manager Jackie lugged to Reverie. We are not able to use the ice that we typically produce in house. We still have to use bottled water for customers who ask for water. Our commitment is to the people we serve, and to food and health safety. Being unsafe is terrible for long-term business.
It is understandable to be extra cautious and wary of any food & drink business choosing to stay open during a water boil advisory. We have done our absolute best to communicate with relevant parties, fully understand the science of our processes, how that can translate to safe and clean water, and ensure that we maintain the same safety standards that we have for ourselves throughout the rest of the year.
