At Elder NYC, tradition is meant to leave the frame.

Chef Sujan Sarkar reimagines the classic London chop house through an Indian lens, bringing artistry to everything from prime cuts, live fire and layered spice to the walls themselves, where “Red Heel” by London-based photography duo Ulas & Merve brings its own surreal point of view.

We carried that same spirit into this collection of imagery.

There are secrets in this hummus. Chef Zach Engel was nice enough to share a few.

The rest might be harder to replicate: growing up as the son of a rabbi, formative trips to Israel and a career that took him through the kitchens of Catit in Tel Aviv, Zahav in Philadelphia and Shaya in New Orleans before opening Galit Restaurant in Chicago.

All of that history, distilled into a bowl of hummus. We got very close to this one. For research, obviously.

A burl is shaped by what surrounds it. So is Burl Evanston.

Its Rule of 80 means sourcing at least 80% of the menu through a local food network of farmers, growers and makers, including some unexpected ones. Third Coast Superior Fish Sauce is made from herring in St. Paul, Minnesota, making it the first and only fish sauce of its kind produced in the U.S.

Making waves on the North Shore, Chef Todd Stein’s Juniper on Green Bay leaves plenty of room to play: sashimi and nigiri from Executive Sushi Chef Akira Yang, ribeye steak frites and rotisserie chicken, yuzu-verbena gimlets, and, fittingly, a 35-foot Lake Michigan sunrise mural stretching across the dining room.

Essence called Kimpton Hotel Fontenot a New Orleans stay “for art aficionados.” Peacock Room is exhibit A.

Mosaic floors, stuffed peacocks, a 19th-century bar and a cocktail experience that starts by drawing a card and letting fate take it from there. Here, art doesn’t stay framed. It becomes the drink, the experience and a world that literally comes to life.

Opened in 2002, Sofitel Chicago Magnificent Mile’s unmistakable glass building was designed by French architect Jean-Paul Viguier as a triangular prism, with a dramatic “prow” extending over the street.

But the hotel is more than a pretty façade. It’s a mountain of fresh towels, room service in a robe and the team that always seems to knock at just the right time.We captured the experience from sidewalk to suite, with a wink along the way.
