Yirgacheffe notes from the roaster!

Good Morning, Vivace Babes

This Sunday’s single origin hails from the birthplace of all coffee; Ethiopia. Specifically, your palate will get to visit the Yirgacheffe growing region in Ethiopia. This specific crop is unique to us because we know exactly what two varietals are found in your shot. 

On 8/16 you’ll get to sample a blend of Dega and Kurume coffee seeds all grown on smallholder farms in Yirgacheffe before being sold by the farmers to the exporters. Both of these varietals are grown exclusively between 1900-2300 meters above sea level making them particularly dense and packed with natural sugars. They will feature a punchy acidity and fruit forward finish. 

Dega is often described as “bright”, presenting lime or orange zest flavors and sweet stone fruit aromatics. Kurume is not far away from these descriptions, often being named to have stone fruit and honey-like sweetness on the palate with tea-like aromatics such as bergamot and jasmine. A match made in heaven if you ask this roaster.

I recommend trying this smooth medium bodied coffee as a straight shot or, if you’re feeling daring, give it a try in one of Vivace’s coffee sodas. With the carbonation and those honey-sweet citrus notes you might be visited by the vision of having a refreshing not-to-sweet soda on a hot summer day. (Finish your soda with a lemon zest if you’re feeling cheeky.)

Indian Momsooned Monsooned Malabar Tomorrow

Hey Bean Nerds!

Our Single Origin this week is one of the most popular beans in the coffee drinking world, in part, due to its low acidity and silky texture. Tomorrow you will get to sample Monsooned Malabar.

Brilliantly on the part of farmers, Malabar coffee is shade grown and intercropped with spices like cardamom, pepper, and vanilla, who graciously lend their aromatics to the Malabar cherries.

The “monsoon” part of our Single Origin feature this week refers to how the coffee is processed after it is dried. The dried beans are placed in open-sided warehouses during monsoon season (June-September) where they are subjected to moisture rich monsoon winds for 14-16 weeks.
Thanks to this process you will find a marshmallow textured shot with very little acidity bursting with black pepper aromatics and vanilla-salted caramel flavors. I recommend trying Monsooned Malabar as a straight shot or in an 8oz Americano as its pillowy texture and salty caramel notes tend to get lost in milk heavy beverages.

This Peruvian Single Origin is what is called “washed”. This means that the coffee cherries are harvested and then run through agitated water to remove the skin and pulp of the bright red cherry exposing the two coffee seeds(beans as we know them) hiding within. Still covered in a light membrane the seeds are then spread into a thin layer and rested in the sun aiding in a micro-fermentation process imparting buckets of flavor and sweetness to the crop. 10 weeks later the membrane, now called parchment in its dry form, is removed before the beans are placed in jute bags to be shipped. 

Due to this micro fermentation process during drying, this medium/light bodied varietal develops an effervescent sweetness on the palate. You may notice candied orange peel at the start of this shot and a dance between toasted hazelnut and earthy dark chocolate at the finish.

Vivace Fun Fact: The coffee cherry is a botanical cousin of peaches and cherries. Does this Peruvian coffee hint at any stone fruits on your palate?
