Hand-cut beef. Seasoned just before it leaves the pass. A yolk to emulsify it into it's silky texture.

Roasted squash, straciatella, pepitas, fig mostarda.

Each dish begins with the season in mind. Squash is at its best right now, and we let that guide everything that follows. Roasted slowly, it develops sweetness and depth without needing much else.

Stracciatella adds richness and contrast, cooling and creamy against the warmth of the squash. Pepitas bring toast and texture, grounding the dish with a gentle nuttiness. Fig mostarda ties everything together, offering sweetness and acidity in measured balance.

We start with the pork shank because it rewards patience. Slowly cooked until the meat yields, never rushed. The braising liquid becomes the base for a deep, glossy demi.

The risotto is gently built gently alongside it absorbing the flavor rather than competing for attention. Carrots bring sweetness and balance. Green onions finish the plate for freshness and lift.

This dish is about letting each ingredient do it's work, then gathering them together at the right moment.
