✨️LUCID + HALO HALO✨️

Presenting the fifth and final course of the Unindexed Series Vol 2: Dreams. Inspired by ._.kusama Infinity Mirror Rooms, and explored the idea of immersion, repetition, and interaction.

At its core, Lucid is a rum-based layered tropical cocktail designed to be a little different with every sip. Its base is made with a blend of carrot, passionfruit, and habanero for just a hint of spice. Layered ontop is clarified stawberry, beet, and dragon fruit for a complex sip. Finally, topped with pineapple, guava, coconut, and lavender, and adorned with passionfruit bursting boba.

Paired alongside, .mke contemporary interpretation of Halo-Halo, the iconic Filipino dessert whose name translates to "mix-mix." Geometric cubes of ube halaya, leche flan, caramelized saba banana, sweetened jackfruit, mango sorbet, coconut gelée, and toasted pinipig are presented atop mirrored reflextions before guests are invited to combine them into their own perfect bite.

A celebration of perspective, participation, and beautiful chaos.

This is your final opportunity to experience the Unindexed Series Vol. 2: Dreams before it makes it's way to the archives.

And while this chapter comes to a close, we're already preparing the next one. We can't eait to share what's coming next.

What could be better than a .mke corn dog for the holiday weekend? House made longganisa sausage in it's classic nostalgic-packed batter, accompanied with banana ketchup, calamansi aioli, and picked red onions & mustard seed. It's a favorite for a reason.

✨MUSHROOM SISIG✨

A perfect pairing for our fourth course.

Roasted king trumpet, sunchoke, dried shiitake, bird’s eye chili, calamansi, soy — grounded beneath a parsnip foam made with coconut milk and ginger. Snap pea oil ties in with the cocktail this dish drew its inspiration from, Dual Reality. It's final touch, charcoal ash and toasted coconut beneath it all.

Layers of varying textures, each just as complex as its next, a reflection of the complexities of our unconscious mind as we dream.

Completely vegan. Absolutely delicious.

✨️DUAL REALITY✨️

Presenting, the fourth course of the Unindexed Series Vol. 2: Dreams. Inspired by Salvador Dali’s "Swans Reflecting Elephants" played with the concept of perception and duality by developing a cocktail that challenge the senses.

At its core, the cocktail is blended with bright blanco tequila, earthy and vegetal mezcal, elderflower, blanc aperitif, white tea syrup, clarified sugar snap pea, and olive bitters. Two aroma strips adorn the glass, when smelled seperately with a sip of the cockail, your pallet picks up nuances. The "swan", a combination of orange & rose blossom, cardamom, and lavender give the cocktail a floral lift, enhancing the soft botanicals in the tea and elderflower. In contrast, the "elephant", composing of the chemical compound of geosmin can simply be described as the smell of the earth after it rains, evokes the rounded and grassy notes of the agave and snap pea.

Two realities simultaneously existing in one glass, it's just about perception.

A nod to the exploration of surrealism and psychodynamic theory, we sure hope Freud and Dali would have enjoyed this one.
