We've been feeling all the summer feels lately. To celebrate, .sagataw created this nostalgic-packed beauty. Blanco tequila, guava, triple sec, acid-adjusted mango, and fresh lime come together with a house-made Bubbalicious watermelon bubblegum syrup, finished with Fire Water habanero tincture for just the right amount of heat. Topped with bubblegum oil for that little extra razzle dazzle. It's pretty fantastic. 🍉🍬

A masterful expression of land and smoke and a perfect pairing to the Nightmare cocktail developed by chef Zach of .mke. American Wagyu hanger steak, crusted in an infusion of ancho chile, roasted coffee, and raw cacao. Anchored by the deep, earthy sweetness of a Huamei plum mole and the silkiness of charred eggplant. Then, a final sharp crescendo of cherry shaved ice cuts through the richness, elevating every bite.

✨️NIGHTMARE✨️

Our newest Experiential menu explores how dreams have been represented through different art movements, a dive into how they have been understood and expressed through time.

During the Romantic era, dreams became something far darker- no longer divine messages, but manifestations of fear, longing, anxiety, and the subconscious. Romantic artists were fascinated by the extreme emotions hidden within the mind, using nightmares and symbolism to explore the tension between beauty and terror.

Inspired by 'The Nightmare' by Henry Fuseli, depicting a woman tormented in her sleep by a demonic incubus pressed against her chest, created an experience designed to feel equally unsettling and seductive.

Nightmare is an earthy, bitter, and smokey concoction developed to hit you in the chest with spice and smoke before flowing into luscious dark fruits.

The third stop on our study through time, art, and unexplainable experiences.

✨️Guided Chartreuse Dinner✨️

On May 6, we're hosting a guided dinner in partnership with and .mke.

This evening us built around six Chartreuse expressions, including rare and highly allocated bottles. Each will be explored as a deep dive, experiended neat and again applied in a cocktail.

Matt Lorine, National Spirits Ambassador for Frederick Wildman and Sons, will lead the educational journey of Chartreuse throughout the dinner, sharing its history, technique, and what makes these expressions so rare and highly allocated.
castelaz, Founder & Service Director of Agency will present the cocktails as interpreted by our drink making team, lead by Partner & Creative Director, , highlighting how each expression is reimagined through the Agency appreoach.

Chef of Sinta will present a French-driven culinary progression built around seasonal, local ingredients, shaped through classic technique and executed through composed dishes designed to compliment each Chartreuse expression.

Seated at a communal table in the historic , the evening is designed for conversation, connection, and a shared experience through each course.

This is an opportunity to experience Chartreuse in a way that is rarely available. Six expressions, including some of the most exclusive bottles in circulation, presented through spirit, cocktails and cusine.

We've hosted intimate dinners before, but this one's extra special.

U10 Ecuadorian prawn poached in pandan butter over a cashew ajo blanco .mke's modern Filipino interpretation of a classic Spanish cold soup. Draped in a calamansi citrus veil, finished with saffron oil and golden raisins.

Paired with Dreams of a Saint, our grappa & brandy clarified with macadamia milk, topped with saffron & white pepper air. The ajo blanco mirrors the cocktail's silky texture; the saffron interpreted by two artists.

Inspired by Paolo Veronese's The Dream of Saint Helena (c. 1570) representing the deep spirituality experienced in a dream and the souls ability to connect with the divine.

✨️DREAMS OF A SAINT✨️

Our newest menu explores how dreams have been represented through different art movements, a dive into how they have been understood and expressed throughout time.

During the Renaissance, dreams were understood as a divine connection- the ability to recieve communication from God. They were seen as a holy experience, where the soul was briefly unbound from the constrainsts of the physical body and able to exist in a higher spiritual space.

Inspired by The Dream of Saint Helena by Paolo Veronese, depicting Saint Helena recieving divine guidance through a dream on the location of the True Cross, .sagataw created a truly divine experience.

Dream of a Saint is built on grappa and brandy, blended with peach, ginger, Days of Heaven tea syrup, vanilla, tonka, and lemon. Clarified with macadamia and oat milk, resulting in a fully vegan, silky and soft texture. Finished with saffron and white pepper air for an unexpected spiritual experience.

Our newest menu explores how people have experienced and expressed dreams through the lens of art movements.

First, where it all began.

Inspired by the Chester Beatty Papyrus (c.1350 BC), is recognized as the first recordings of dreams. Visions of building temples, teeth falling out, and social dynamics were understood as messages from Gods or the dead.

Barrel-aged gin is layered with honey, acid-adjusted palo santo tea, cherry bitters from and . Topped with a milk-soaked fig steeped in cardamom, dried apricot, mango leaves and a touch more honey. Finished with fennel pollen and toasted milk powder.

Paired with the QUAIL from the mind of chef of .mke- marinated in white adobo, slow poached, cold-smoked and hidden beneath a hand-crinkled turmeric rice paper "papyrus" that you'll have to break through, revealing kabocha squash, macadamia dukkah, and a bright hint of pomegranate.

The first chapter of an ongoing conversation between cocktails, food, and art.

✨️THE UNINDEXED SERIES VOL 2: DREAMS✨️

This week, we quietly released our newest menu. An exploration of dreams through art movements, from ancient Egyptians, to contemporary art.

Each drink maker selected a movement and spent weeks developing their interpretation, focusing on flavor, texture, and perspective based on the major themes of each art movement. Alongside, of .mke developed their interpretation with a Filipino flair, creating paired dishes to elevate the experience.

This menu is a true collaboration and something we have been eager to share. Available now, for a limited time.
