The Scranton Seahorse Inn is housed in the 1833 Greek revival mansion that was once home to Serano Scranton and his family. We are located in the heart of Madison's village and are a short walk to beautiful beaches, boutiques and restaurants. We start guests off each day with a gourmet breakfast made of fresh local ingredients - some of which come from our own gardens.

Peel, wash, and chop 1/2 pound purple carrots. Boil in water until very soft. Strain retaining some of the liquid to help thin the puree if necessary. Using an immersion or standard blender puree until very smooth. Enhance the sweetness by adding a few tablespoons of local honey or maple syrup. Keep in the refrigerator for 1 week.
