Dan Dan noodles have been a Sichuan street food staple since the 1800s, traditionally cold noodles, warm sauce, ground pork, Sichuan chili, and peanuts.

House-made paccheri, an Italian extruded pasta, thick walled and built to hold a sauce, glazed in ground rabbit prepared in the Dan Dan tradition with Sichuan pepper, peanuts, and chicken stock. Wood roasted cucumber for char and brightness. Morel mushrooms because tis the season.
