Last year, we renovated the entire space inside our REO Town location and introduced hand scooped ice cream. With a mid June launch, we did not get the full summer to serve ice cream to everyone.

This year is different. We are ready for the entire season and going all in chasing a new scoop record. Today is finally supposed to hit 80 degrees in Lansing, and there is no better time to stop in for ice cream! Don’t miss out.

It’s starting to feel real! We’re picking out the paint and booths!

We’re currently dialing in the right combination of booth fabric, wall color, and finishes for the dining room. (none of these were winners)

We still have some work to do, but we have something really special planned for the interior of Assembly.

Our REO Town location just had its busiest week since June 2024!

Thank you so much for the incredible support.

Seeing the REO Town community embrace the addition of ice cream has meant a lot to us, and moments like this are a reminder of how lucky we are to be part of this neighborhood.

We’re incredibly grateful for the last **11 years in REO Town** and for every person who continues to support us. Here’s to keeping it going.

We’re excited to introduce our full sundae lineup. Over the past few days we’ve been sharing each one, and now they’re all here together. Five unique sundaes, each built with a mix of Saddleback flavors and classic dessert nostalgia.

Circus Sundae
Smurfs Sundae

From warm corncake and caramel to gummy worms, peanut butter crunch, frosted animal crackers, and blue moon with marshmallow sauce, each one brings something different to the table.

All five are now available.

Introducing the Circus Sundae.
This one stands out from the rest. It starts with vanilla ice cream, then gets topped with sprinkles and frosted animal crackers for a nostalgic, playful twist. Use a spoon or scoop the ice cream with the animal crackers, it’s up to you. Simple ingredients, but a completely different vibe from the rest of the lineup.

Introducing the Smurfs Sundae.
This is the final sundae in our lineup. It starts with blue moon ice cream, topped with marshmallow sauce and finished with a cherry on top. Smooth, sweet, and a little nostalgic, it’s a simple build that delivers a fun twist in both flavor and look.

Up next on the sundae menu is the PB & Wow. This one is built for peanut butter fans. It starts with peanut butter ice cream, topped with M&Ms, a peanut crumble, and finished with a chocolate drizzle. Sweet, salty, and full of crunch.
