Everybody see a food truck and think it’s “pull up, sell out, go home rich”
Let me educate you real quick.
This ain’t just cooking.
This is yearly permits, yearly inspections, commissary kitchens, water tanks, generators, fire extinguishers… and yes, they WILL shut you down behind not having a thermometer.
This is gloves, to-go containers, sanitizers, test strips, trash cans, paper towels… aka MONEY going out before a single plate is sold.
This is waking up early, prepping for hours, loading up, unloading, cooking in Texas heat, then cleaning it ALL back up like it never happened.
And here’s the part nobody wants to hear…
Just because your event got 200 people don’t mean 200 people eating 🤨
Real numbers? You might serve 50 on a good day.
So nah… it’s not “just pull up and cook.”
It’s a whole business on wheels.
That being said every event is not for us!
