Sunday in Oak Island. 🧡

One of my favorite moments from the evening: presenting our Southern Peach & Tomato Tartlet — whipped feta, fresh basil, balsamic reduction and cold-pressed extra virgin olive oil.

But Dinner Conversations is about more than what lands on the plate. It’s about the laughter happening just beyond it. The stories being shared across the counter. The opportunity to cook in front of our guests, talk about life, and allow a special occasion to unfold naturally around the table.

Let’s talk about July 11th—and how one adjustment became an Occasions By M signature. 🧡

This summer, we had the opportunity to serve an incredible group of couples at Morehead Manor in Durham. And like so many great nights around the table, the menu taught us something too.

We had guests who were dairy-free. Instead of preparing something completely different and singling anyone out, I wanted to create something the entire table could enjoy together.

That’s where our Shish*to Butter came into play.

It began as an adjustment. It ended up being one of the biggest hits of the evening. Since July 11th, it has continued to make its way onto our menus, paired with warm artisan bread as one of the first tastes welcoming guests to the table.

Our menu included beautiful dishes like our Butter-Poached Lobster, but hospitality isn’t just following a menu exactly as it was written. It’s knowing how to adapt when the moment calls for it. We even made an impromptu hot sauce from a few simple ingredients tucked inside the Chef Box.

Listen. Adjust. Create. Keep the table together.

Some of the best things we’ve created weren’t planned months in advance. They happened because a guest needed something, the moment called for creativity, and we were prepared enough to respond.

Last night in Oak Island, what started as a 3-course dinner for Adam’s birthday celebration became a multi-course experience.

And that is one of the things I love most about private dining.

A menu gives us the foundation, but sometimes the evening takes on a life of its own. The conversation is flowing. Everyone is enjoying themselves. One course leads naturally into another, and before you know it, dinner has become an experience.
