Fresh morels are the star of the plate! We are stuffing the mushrooms with a house-made chicken and ramp sausage, and roasting them in brown butter. A potato pave is typically thinly sliced Yukons tossed in clarified butter, layered in a terrine mold, and baked. The cross section of the terrine reveals the tedious work of layering the potatoes. Our Pave incorporates ramps in between the layers of potato. The Pave is seared and served with an asparagus coulis, pickled ramps, morels, and Gruyère. Available this weekend while supplies last!🇫🇷

Local soft shells are lightly dredged in flour, coated in a Dijon laced egg wash, and sautéed in brown butter. Panisse is a chickpea cake that we have seasoned with green garlic and lemon, and fry in clarified butter til crispy. Our soft shell frites is accompanied by a saice Americaine, a lobster bisque type sauce. Available while soft shell crabs are around!🇫🇷🦀

Chicken legs and thighs are marinated in aromatics and white wine for a couple of days. The chicken is braised, meat picked from the bone, and mixed with a green garlic aioli. The coq au vin is then stuffed with a truffled Comte cheese, breaded, and fried in clarified butter until crispy. When the chicken is cut open, the molten cheese pours out. The dish is served with a poached egg, English pea puree, asparagus, and chicken jus. Available while supplies last!🇫🇷

Our house made garlic sausage utilizes three types of garlic: green(young and milder), roasted(brings out the sweetness), and raw for that pungent bite. The garlic sausage is warmed and accompanied by lightly pickled artichoke hearts, crawfish, and asparagus. Sauce Améericaine is lobster bisque sauce of sorts, and is seasoned with cognac and tarragon. Available this weekend!🇫🇷
