A closer look at Chef Maxime Gilbert.
Ahead of his collaboration with Chef Yuu Shimano at Restaurant Yuu later this month, we are sharing the story behind his culinary journey.
Born in France, where cuisine is deeply woven into everyday culture, Chef Maxime Gilbert was drawn to the kitchen from an early age. The joy that food brought to his family left a lasting impression, and he knew from childhood that he wanted to become a chef.
His career has taken him through kitchens in France, Scotland, the United States, Morocco, China, and Hong Kong. In Paris, he spent five years at Le Meurice, rising from commis chef to sous chef and working under Yannick Allรฉno, who would become an important mentor in his career.
Chef Maxime later served as Chef de Cuisine at Amber in Hong Kong before opening รcriture, where his cooking brought together traditional French technique, exceptional ingredients from France and Japan, and a refined sense of simplicity. The restaurant went on to receive two Michelin stars shortly after opening.
At the heart of his cooking is a belief that cuisine is meant to be shared. His dishes reflect not only precision and technique, but also a desire to create something personal and memorable for each guest.ใ
On August 27, Chef Maxime brings this story to Restaurant Yuu for a special collaborative dinner with Chef Yuu Shimano.
