It takes a village and a nudge. So Hannah Hanna Gordola Wrighter slid into our DM’s after seeing a viral post on Sinigang Soup Dumplings. Now we don’t usually take special request but for Hannah and Scott who have been rocking with us since day 1 coupled with our Executive Sous, Chef C, who is classically trained and eager to use his skills.. how could we say no? We couldn’t, we shouldn’t, we didn’t.

So here you have it, Sinigang Soup Dumplings for a limited time. Dine-in only. Now through Saturday for the world soccer Finals.

Ground stewed Sinigang pork belly, wrapped in hand crafted Xioa Long Bao filled with our classic Sinigang soup.

Xioa Long Bao is the official name for Chinese Soup Dumpling. Chinese influences in the Philippines date back to the 10th century through pre-colonial maritime trade. Deeply rooted in Southern Chinese and Hokkien cultures, this heritage is highly visible today in Filipino cuisine, and traditions, notably showcased in Manila's Binondo, the world's oldest Chinatown.

We love sunshowers; the way the wet road smells when the oil rises to the surface and the sun peaks through the raindrops. The way the thunder doesn’t make sense as the heat from the sun touches your skin. We absolutely love this oxymoronic weather because somewhere out there amidst the impending downpour of doom, there is a perfect rainbow. 🌈

So yeah, ponder that, and then come by for some fresh Filipino food. Mkay?

Today we celebrate the day in 1865 when the last enslaved Black Americans from Galveston Bay were freed. It’s a day of remembrance, resistance and resilience.

When the U.S. occupied the Philippines in 1898, the same racist logic used to justify slavery was used to justify colonizing our people. Black Buffalo Soldiers were sent to suppress Filipino freedom fighters fighting for their own independence in the Philippine-American War (1899-1914). However some, like Corporal David Fagen, chose solidarity over orders and defected to fight alongside us. Freedom fighters recognize freedom fighters.

As a Filipino-owned business, we know that every step toward justice and equality in this country has been carried by people who refused to accept “not yet” or “not you”. Freedom for all marginalized communities became real for everyone in America because of the strength, and courage of our Black communities. We carry deep respect for that legacy.

On this day, it has become a custom to eat red to pay tribute to the bloodshed of enslaved Americans. So today we are adding extra banana-ketchup to our BBQ to commemorate those who passed during the slave trade.

Banana ketchup will make today’s BBQ a little sweeter which is how we feel about celebrating Black freedom, Black excellence, and Black resilience.

Happy Juneteenth. ✊🏿

Introspective Collective.

Being a New York Knicks fan living in Atlanta is an intense emotional roller coaster defined by fierce geographical isolation, a deep-rooted southern historical sports rivalry, and the exhausting struggle of the “UPTOP” stigma.

Living deep in Atlanta Hawks territory means constantly swimming upstream against local fandom. We, KNICKS FANS, are surrounded by a different basketball culture, which breeds a strong, defensive sense of pride from our NEW YORK roots. And to top it off, we are all physically isolated from the euphoria sweeping New York City. We’re missing out on the day to day energy that non NY’ers can’t fathom.
IT’S SPIRITUAL‼️

I feel just like you all do. No doubt I take off the shoes when I enter someone else’s house. I respect the locale here but I’m NY to the core! Pardon my BACK for the rest of this CHAMPIONSHIP RUN‼️

June 12 exists not as a date on a calendar but as a reckoning — Aguinaldo’s declaration in 1898 was never a petition. It was an assertion. Filipinos had already bled for a republic. The U.S. arrived, called that sovereignty something that needed to be managed, and named the erasure care.

“Benevolent Assimilation” is one of the most violent phrases in our history, because benevolence was the disguise. It said: “ You are not yet ready to govern yourselves. What Macapagal understood — and what many of us are still unlearning — is that the colonial project doesn’t just steal land and labor. It steals timelines. It makes you celebrate the date they chose. June 12 is when we take the pen back.

but decolonization is not a date swap. It lives in whether you feel shame speaking Bisaya in Manila. It lives in the 180+ ethno-linguistic groups whose stories Imperial Manila doesn’t center. Healing from colonial trauma means resisting the urge to romanticize those who harmed us just because the harm came wearing a smile.

We were never a project. We were always a people.
Let’s unlearn these myths together.

Today, June 12th, marks the real Philippine Independence Day, not the one Harry S. Truman declared on July 4, 1946, but the one our ancestors bled for and won on June 12, 1898. 🇵🇭

Eight provinces rose up against the colonizers. Eight provinces fought to reclaim their lives, their land, their names. And today, those eight rays remind us every time we look at our flag: our freedom was never granted, it was taken back 128 years ago, today.

So today we celebrate by doing what Filipinos do best, feeding the people we love (yes, that includes you). 🍽️

At Estrellita we think the next best thing to The Hawks being in The Finals is The Knicks being in The Finals.

We got the best Lechon Kawali in 🍑 outside of Queens and Jersey City, IYKYK. Slide through for a summer sip of our Calimanmosa (TM) refreshing beer topped with Calamansi juice, or Isastegi Cider from the Basque Region of Spain.

I always tell our guests when I pour this bottle, “Since the Spanish colonizers took our indigenous last names, we are taking their cider and wine.”

SIDE NOTE | Basque regional ciders, known for its intensely dry, naturally tart, and unfiltered fermented apple essence, must be poured at great heights to aerate the WILD yeast and should be consumed quickly.
