Along Thailand’s waterways, cooks minced fresh fish and blended it with curry paste, kaffir lime leaves, and aromatic herbs. Beyond adding flavor, many of these ingredients were valued for their natural antimicrobial properties, helping keep fish fresh in Thailand’s tropical climate.

Fish Cakes at Bangkok Thai are made with white fish paste, red curry, kaffir lime leaves, and crisp green beans, cooked until golden and served with three-flavor chili sauce, ground peanut, and cucumber.
