Our roaster's choice this month is an extra special coffee. For the month of September, we have Spirit Mountain Dominican Republic SELECT.
We didn't even know this was available, but when the owner, Chad Wallace, came do deliver our coffee order, he made us an offer we couldn't refuse! Always looking to improve their coffee, Chad and his crew had been working on an interesting process we hadn't yet heard of - anaerobic fermentation. This coffee is the result of their experimentation, and BOY! have they outdone themselves.
Here are the geeky details of the results:
- Blend of Typica and Caturra varietals
- Washed, Anaerobic Fermentation with lactic acid for 73 hours
- Organically grown, Rainforest Alliance and UTZ approved
- Notes of cherry jam, cocoa, and almond butter

Our latest New Guinea is a "flat bean", which refers to it's shape. Hand-picked at about 4800 feet above sea level, it's been wash processed and meticulously dried in the sun. While other coffees from Indonesia can have a dominant, earthy tone, this coffee has a much lighter profile with a tea-like body. We've been enjoying this one for a few weeks now, and we just can't get enough! Costa Rica lends a smooth, caramel backdrop to the brightly toned notes of Yirgacheffe. Meanwhile, the New Guinea Estate smooths out the polarity of these two coffees. We've identified notes of buckwheat, scotch, and surprisingly, a tantalizing hint of jasmine.
