Rampueng (รำพึง) Margarita

Fruity twist on a classic with an earthy finish. Sesame infused tequila, ginger, passionfruit and lime. Sour ginger salt on the rim.

The word roughly means to ruminate, reflect. Inspired by by a song by Cambodian singer Ros Serey Sothea you can hear in the background of this video. The word exists in both Cambodian and Thai.

* northern-style raw fish laab with a prik laab that features makhwaen and long pepper

* long-leaf coriander, finely sliced

* a couple of g*i ping chicken skewers on their final baste

* cashews with lime leaf and dried chilli, racked up and ready to go

* confit chicken skin on its final fry to crisp, soon to be partnered with some Sriracha

* a simple soup of prawns, basil and young coconut on the pass

loy gaew kratorn - iced santol in santol syrup

santol is one of Thailand’s lesser-known but most delicious fruits, and this is the way to eat it on a hot day.

we first salt the fruit to remove its astringency, then rinse it and immerse it in a syrup infused with fresh jasmine flowers. after 24 hours, it’s ready. we serve the macerated fruit and its fragrant syrup with crushed ice.

santol season in Thailand coincides with strawberry season in the UK, and the addition of a few fresh English strawberries is a combo we love.
