Dan Keeling salutes off-trend, niche and lesser spotted wines (& herbal liqueurs)

‘The Carthusian monks behind Chartreuse keep its recipe confidential – although it’s known to contain far more ingredients than in the original manuscript given to them in 1605 by François-Annibal d’Estrées in Paris’ Jardins du Luxembourg, where their monastery once stood. Initially, this resulted in a potent red elixir which in all probability would have been as reviving for the infirm as a bout of self-flagellation: the current green formulation was only arrived at in in 1764, presumably after decades of mind-altering experimentation.

I was fortunate enough to be granted one of five annual visits inside Chartreuse’s Aiguenoire distillery earlier this year. The only ingredient that one of the handful of civilian distillery workers employed by the monks could say the liqueur contained for certain is lemon balm. When I pressed him further, he raised his hands skywards in resignation, and explained how the workers receive numbered sacks of pre-selected ingredients from the Monastery of Grande Chartreuse, ready to be macerated in 96% alcohol (made from beetroot for Green Chartreuse, and grapes for Yellow) and 4% water before being put in the still. Even the accountant who pays the monks’ many suppliers around the world doesn’t know exactly what they are buying, as specifics are intentionally omitted from invoices.’

‘You soon got to learn that eating in restaurants
where the tables were too close together or that were too noisy was a disaster. You also had to choose the right level of poshness so that your guest, despite being a celebrity, would feel at ease. Some places would be too fancy, others too casual. At the time I took notes in a reporter’s notebook, so a table that was overloaded with glasses and cutlery and any kind of gewgaws didn’t work well. were constantly being interrupted by a waiter
