Gyoza did not begin in Japan. It arrived in the late 1940’s, carried home by soldiers returning from Manchuria, in northeast China.
We make ours the long way. The dough is rolled here this morning. The filling is our own Wagyu. Nothing arrives in a box.
A finer wrapper, a little more garlic and carefully steamed, the way Japan made the dish its own.
Beneath a reduction of tomato, garlic and miso, held low for hours until it turns to velvet. Among the most umami-rich ingredients on earth, from opposite ends of it.
