While the vines enjoy their winter rest, Russ and the team are hard at work pruning each one by hand.
Dormancy is an important time in the vineyard, allowing the vines to conserve energy and prepare for the growing season ahead.
Winter pruning involves removing up to 90% of the previous season's growth to establish vine balance, regulate crop load, maintain vine structure and set the vines up for a successful vintage.
