Some experiential fermentation happening while I wait for my pressure canners to arrive.
Turns out the Romans took a lot of fermentation practices from the cultures they conquered. I started following lost Italian recipes and came across all kinds of cultural fermentation practices.
So here is a bean fermentation experiment. I have no expectations on how it will turn out but am looking forward to tasting the results.
