From Imereti, Georgia, Baia’s W**e Tsolikouri brings bright citrus, orchard fruit and a gentle mineral finish. Over in Rías Baixas, Spain, Nanclares y Prieto ‘Dandelion’ Albariño is a beautiful coastal w**e, crisp and lively with notes of lemon, green apple and a refreshing salinity.

Both pouring by the glass at our Paddington bar. Pull up a chair, order a few plates and settle in for the afternoon.

Head Chef Jorge has spent over a decade cooking his way through Mexico, the US and Australia, with stops at Hotel San Cristóbal and the iconic Contramar. Sous Chef Santiago brings experience from Sydney favourites Kuro Bar & Dining and Cibaria.

Two different backgrounds, one shared appetite for exploring Levantine and Mediterranean flavours and finding new ways to bring them to the table.
