A Bottle with a Story 🍷

This distinctive Clavelin is used exclusively for yellow wine Vin Jaune from France's Jura region. Its shape is inspired by the classic English-style wine bottle once widely used for premium imported wines, preserving a centuries-old tradition while becoming an icon in its own right.

Today, the Clavelin is reserved for one of the world's most extraordinary wines. According to local legend, it represents the exact amount of wine remaining from an original litre of Savagnin after the legally required six years and three months of barrel ageing beneath a natural veil of yeast. The rest slowly disappears to evaporation—known as the "angel's share."

🍷 The Art of Opening Time 🍷

At Fantôme, we’re fortunate to pour wines from true collectors’ cellars — some dating back to the 1950s.

But with great age comes a delicate challenge: the cork.

Over decades, natural cork slowly loses elasticity, becoming fragile and crumbly. A rushed opening can send pieces into the wine, so every bottle demands patience, precision, and respect. We're carefully extracting the cork from a 1988 Penfolds Grange — a wine that has spent nearly four decades quietly evolving in the bottle.

The 1988 vintage is regarded as one of the classic Grange releases of the era. Produced during a warm South Australian growing season, it delivered remarkable concentration and structure, helping the wine develop extraordinary complexity over the years. Today, bottles from this vintage reveal layers of dark fruit, spice, leather, cedar, and the unmistakable savoury character that only time can create.

Opening an old bottle isn't just service — it's a conversation with history.
