The Story Behind Pho. Vietnam’s Most Iconic Dish. 🍜
Pho (pronounced “fuh”) is more than just soup. It is a cultural symbol of Vietnam with a rich, layered history shaped by colonization, migration, and resilience.
🇻🇳 Origins: Northern Vietnam
Pho is believed to have originated in northern Vietnam, specifically around Hanoi, in the early 20th century. It started as a street food for workers where vendors carried poles with pots of broth on one side and noodles/meat on the other!
🇫🇷 French Influence
During French colonization of Vietnam in the late 1800s–1950s, pho evolved! The French increased beef consumption (Vietnamese traditionally ate more pork) & leftover beef bones were used to make rich, slow-simmered broths.
⚔️ War & Migration Changed Pho
After the Vietnam War, pho split into two main styles:
Northern Pho 🍜
Simpler, cleaner broth
Focus on pure beef flavor
Minimal toppings
Southern Pho 🍜
Sweeter, more complex broth
Loaded with herbs, bean sprouts, lime, hoisin, and sriracha
This is the version most popular in the U.S.
🌎 Pho Goes Global
Vietnamese refugees brought pho around the world in the 1970s–80s where it became huge in the U.S., especially in Texas and California. It has since been adapted to local tastes while keeping its roots, and is now a staple comfort food worldwide.
