On Sunday, August 30th from 5-7pm, we’re pouring a blind flight of 3 wines selected by local sommeliers around the Waco area- if you correctly guess 2 out of 3 of the wines’ grape and country of origin, the flight is FREE!

Our worksheets are designed to give you all the tools you need to efficiently decipher what’s in your glass. All of the possible varieties and countries are also there as well! It’s just up to you to decide which is which!

This is a come and go, low-pressure, educational event and is great for solo enthusiasts, industry professionals, or event a date.

There is something especially lovely about gathering around a table at the end of a season. ☀️
On Tuesday, September 8th, Segovia invites you to join us for an intimate four-course Chef’s Wine Dinner celebrating the final flavors of summer, paired with wines from around the world. 🌎

Chef Armando’s menu begins with fluke crudo, coconut leche de tigre and radish, paired with Alvarinho from Portugal. From there, enjoy seared scallops with peas and guanciale, accompanied by Chenin Blanc from South Africa.

The evening continues with butter-poached salmon, lemon marinière and orzo, paired with Oregon Pinot Noir, before concluding with a refreshing pomegranate, raspberry and lemon sorbet alongside Crémant de Bourgogne from France.

Each wine has been selected to complement the course before it, creating a dinner that unfolds from bright and delicate to rich and savory, then finishes crisp and refreshing.

Each wine has been expertly selected by our sommelier an owner, Courtney!

Meet Blanca!

If you’ve enjoyed one of our charcuterie boards, a fresh salad, or something sweet to finish your meal, you’ve likely experienced a little of Blanca’s work. 🧀🥗🎂

Blanca helps keep our kitchen moving by preparing our charcuterie boards, salads, desserts, and assisting wherever she’s needed—including making sure the dishes keep flowing during busy services. Every role behind the scenes helps create the experience our guests enjoy. Fun fact: Blanca is Chef Armando’s mom, making Segovia a true family-run business. She makes you feel like family even if it’s your first visit or your 50th!

Restaurants run on teamwork, and we’re grateful for everyone who plays a part in bringing each service together. Get to know the people behind your favorite tapas and wine bar!
