Many Sichuan dishes have local roots and colorful histories. Dandan noodles is one of our favorites.

Dandan refers to a type of carrying pole that was used by walking street vendors who sold the dish to passers-by. The pole was carried over the shoulder, with two baskets containing noodles and sauce attached at either end. This spicy noodle dish was affordable and became a mainstay of the Chengdu street food scene. Our Dandan noodles are served dry , with Master Chef Zheng’s special red chile oil, in the traditional Chengdu style.

As we always say, “authentic never changes.”
