I just wanted to share an update with everybody. We will be closed again this week.
Alex has drill this weekend in Carol and I are going to Augusta for a promotion ceremony for our nephew who is being promoted to lieutenant colonel in the army.
As far as what's going on in the store we are down to putting the finish on the floor in the dining room and finding tables and chairs. We are probably going to build our own tables but we will still have to purchase chairs.
We have an inspection scheduled for Monday and we are hoping it will be the last one!

Sorry I should have posted this sooner but I have been very busy.
We had an electrical inspection on Monday and have to have the electrician make one small fix. One of the exit lights burned out between the time we put it in and the time of the inspection so it has to be replaced. No big deal no big cost.
We are pushing through to finish the dining room. We have to make the back door meet code for safe exits. After that we are going to finish the floor the same way as we did in the front of the building.
All of that is a long way of saying we are not going to be open this weekend. We are going to push through and try to get this project done!

It's showtime! Barbecue Saturday is underway today at Shawnee Crossing we have both baby back ribs and beef brisket. Our sides today are loaded mashed potatoes and strawberry shortcake hope to see you today at the Shawnee Crossing

We are running a wet age experiment on a set of New York strip steaks. Today is day 14. I pulled one out to cook for lunch. I have a sous vide machine at home which works exceptionally well. I thought I would try to fake it and do it on the stove top here at the store. Major mistake! Way over cooked. But given all of that it is still tender and tasty although a little dry.

Short cakes are all made, and strawberries are all cut up. Taking a little lunch break then I will be making the whipped cream.
I have all the ingredients set out for the Alfredo sauce but I'm not going to make it until just before we open so it will be hot and fresh.
I am on the fence about whether or not to put sugar on the strawberries so that they will be a little bit syrupy when poured over the whipped cream and shortcake. Anybody have any thoughts?

Time for a Shawnee Crossing update. We will be at the store working tonight but the kitchen will not be open. If you need anything out of the cold case we would be happy to serve you. We are fully stocked with Smith Brothers Creamery .
We will be open Friday night and we will have a Friday night special. I am making homemade Alfredo sauce which will be served over linguine. He will have your choice of protein, chicken or shrimp. It will be served with a side salad and a piece of strawberry shortcake. It will be 12.99 special.
We also have fish tales, seafood dinners, and fish dinners, for those who are observing Lenten restrictions. For all others the full menu will be available.
On Saturday we will be expanding our barbecue offering by having both baby back ribs and brisket.
We appreciate your patience while we complete the dining room and get ready for final inspection.

We are open for Saturday BBQ! Today we have BBQ Baby Back Ribs served with cheesy hash brown potatoes and a piece of white cake topped with homemade whipped cream and fresh strawberries!
We have 36 servings of ribs. Any pre-orders have to be picked up by 6:00 p.m. We have found that holding our barbecue past 6:00 degrades the quality.
If you don't want ribs we have our full menu available to you today. We also have a limited quantity of chicken wings that we would normally serve on Thursday night.
I'm going to do my best to resume our normal schedule next week. Sorry for the inconvenience of not being open this past Thursday and Friday.
