A big Arigatougozaimasu to the James Beard Foundation members for nominating Chef Jun of our sister restaurant in Bellevue, Takai by Kashiba, as a semi-finalist for Best Chef of our region for 2025. Originally recruited by Chef Kashiba in Japan over 10 years ago, Jun san has since created quite the following on the Eastside and it is wonderful to see this prestigious acknowledgement of his hard work and dedication to his craft. We also know Chef as being a devoted family man and father of two. How he balances so many plates (and knives) is very inspiring. Omedetougozaimasu (Congratulations), Chef Jun!

We're doing a repeat on this throwback Thursday for a well deserving dish. Black Cod Kasuzuke. Seattle and Chef Kashiba were pioneers in introducing this classic Japanese dish to the US. Just ask The New York Times, since they assigned their food reporter here in 1988 to investigate this amazing dish causing a sensation in our Pacific Northwest.
