Ask me a decade ago if I think I'd be preparing delicious authentic Italian food for sale and I'd call you crazy yet here we are.

BBQ pork shoulder, chipotle corn, pickles and Mac n cheese on a cheesey par bake with mozzarella cheese, THE number one Italian flavored cheese.

Summer doldrums already.

Need daily trips to Rita's just to make sense of it all.

Gluten free pizza ordering is absolutely through the roof, as if more and more diagnosis flood the population.

Less vegans tho.

Maybe they've moved on? I'll ask Tom what he thinks.

Anyone know what ugly duck is charging for coffee slush? I like to come in at 50% of whatever he is charging. It has been too hard in recent years.

Brother Randall has pineapple and chicken tidbits, pickled red onions.

Slush is mango coconut lime with all real ingredients. We tend to use real stuff at the beginning of the season and transition into premade syrups in August as we lose the passion.

Fairport progress is basically at a standstill, had really taken off yet, corporate HQ tells me it'll "happen when it happens."

Got me feeling REAL sentimental. We've gone from knowing JACK S**T about pizza 5 years ago to creating a real force, doing a little good, and having fun. Couldn't be prouder. we love you.

Chesters Cheat Day Square has Old Country Sweet Boss Sauce hybrid that has been catching fire AGAIN in the Rochester culinary scene. Pickles, store bought bacon crumbles, garlic oil, Red Onion, French fries and aforementioned sauce. Putting this one out there before pizzeria NATO beats us to it.

I believe Ricard Ruddington debuted a similar dish when he was coming up in the culinary mecca El Napa Valley.

Speaking of celebrity chuffs, I saw Nate from Strangebird this past Saturday, It's always fun to rub elbows with your heroes.

I'm driving to CANTON OHIO tomorrow as I found a lead on USED pizza pans, the exact HARD TO FIND ones that we currently use. Basically bribing a little Caesars operator to have 300 pans "fall off the truck."

Spinach artichoke dip makes a triumphant, well, a return.

I claimed that this salad was a great pizza shop Thai peanut chicken salad and jimmy quickly corrected me, and said that this salad is good enough to be on any Applebee's or even cheesecake factory menu.

Please note we have peanut butter and peanuts in the building this week.

Inspired by Saturday nights shift meal from our neighbors we are knee deep in the sticky sauce. I do not know why their insta has 2 f's in cafe but if I know one thing about white swan it is that you don't question it. You only hope to contain them. Lighting in a bottle over there.

Sesame/Tso hybrid. Sesame chicken, rice, rapini, sesame seeds and loads of sticky sauce on a pizza. Same old s**t different day!

Discounts coming this week for sports enthusiasts, apparently hockey is hot right now and the NFL draft is this week, some buck! Stay tuned to stories.

Hoping to muster up the courage to put an email together with some key details and requests.

Customers have been a BIT UNRULY on the weekends. Folks, if you place your order online you need to come in at the predetermined time, not whenever you want. We are a fairly popular spot and orders take time during peak hours, I can only imagine the Fairport locals are going to be UNBEARABLE about s**t like this.
