A new season, built from memory.
This menu began with flavors close to me, some from heritage and nostalgia, and some are just simple ingredients I keep returning to.

Tomato and keemun. Miso. Salted egg yolk. Pear, corn, brown butter.

Our butter corn latte is back: sweet summer corn + brown butter, finished with a cloud of cream and torched corn on top.

Sweet, toasty, buttery, a little smoky, and only here for a very short time.

It started with the strawberries 🍓 cooked low and slow into our first house-made syrup. Once we tasted the difference, we didn’t want to serve anything we hadn’t made ourselves. The miso butterscotch, stirred from scratch. The lavender, steeped by hand. Almost everything in the cup begins in our own kitchen now.

It’s the slower way. It’s also the whole reason it tastes the way it does.

There's one matcha we can't ship, can't rush, and can't scale: our single-origin stone-milled matcha, made fresh in-house from Samidori cultivar tencha grown in Uji.

Behind the counter, the stone mill turns whole tencha leaves into matcha slowly, batch by batch, the way it's been done for centuries. It's one of several matchas we serve, and the only one milled on-site.

Available in-store only, while it's fresh.

Some of my favorite summer desserts weren’t really desserts at all.
Some of my early childhood memories recalls my mom slicing ripe tomatoes, sprinkle them with sugar, and tuck them into the fridge until they were ice cold. The sugar would melt into the tomato juice and make this sweet, tart little syrup at the bottom of the bowl. It was my little special afternoon treat post homework and violin practice.

It wasn’t until I was older that I realized not everyone grew up eating tomatoes this way. To me, they’ve always been a fruit, and this has always tasted like late summer.

This year, we made it into a soda. 🍅

About the tea, coffee, ingredients, the people who grow them, the people we work with, and the community that has grown around all of it.
