(2) Copycat Nando's Peri Peri Sauce
INGREDIENTS
* 3-8 Thai red chilies (depending on spice preference; 3 for medium; 8 for extra hot)
* 1 medium red bell pepper
* ½ small onion
* 1 lemon (zested and juiced)
* 1-2 tablespoons white vinegar(depending on preference)
* ½ cup olive oil (or canola oil)
* 9 cloves garlic (about 3 tablespoons)
* 2 teaspoons smoked paprika
* 1 tablespoon dried oregano
* 1 tablespoon coarse kosher salt
INSTRUCTIONS
1. Add all ingredients to a food processor or blender. Blend for 30-60 seconds depending on the texture you want. I like the sauce to be a bit chunkier as the chunky bits get nice and caramelized when roasted.
2. Check for spiciness. If you want it hotter, blend in more chili peppers.
3. Transfer to a jar and refrigerate until ready for use. Depending on the freshness of your ingredients, the sauce can last up to a week in the fridge.
