Chef Francis believes great chicken should be just as enjoyable to eat as it is flavorful.
That’s why one of his favorite techniques is carefully deboning the chicken before it hits the plate. You still get all the crisp skin, juicy flavor, and beautiful presentation, but without having to work around bones every few bites.
