With beef being such a hot topic right now, we’ve been reminiscing a lot about something that has been a huge part of what we do since we've opened: sourcing as much of our food/ingredients as locally as we can.
This isnt just trendy for us. It’s been a part of our way of doing business for over a decade. Even when a little extra work is involved.
Sometimes that means talking to the farmer, coordinating with the butcher, figuring out cuts, storage for whole or half cows/hogs and timing. It means paying attention to where our food comes from and building relationships with the people who raise it.
That part matters to us.
It keeps more money right here in our communities. It supports farmers and producers who are working incredibly hard to feed us. It gives us a better understanding of where our food comes from. It allows us to build relationships with the people behind the products we serve instead of treating food like a commodity that simply appears on a truck or onto your plate.
There is a whole side of this that we, as consumers, rarely see. Farmers caring for livestock through 100°+ days, making sure animals have water, tending chickens in brutal heat, dealing with weather, feed costs, markets and a thousand other things that go into getting food from a farm to our tables.
We know that buying local can sometimes cost a little more. We also know that not everyone can or wants to shop that way all the time. There’s absolutely nothing wrong with grabbing a burger through the drive-thru or buying what’s convenient at the grocery store. We do that too once in a while.
But if more of us can make a local choice here and there like buying a dozen eggs from a local producer, picking up meat from a nearby farmer, buying bread from a local bakery that uses sustainably grown wheat, choosing a locally grown vegetable when it’s available, it adds up.
We’ve been doing this for more than a decade now, and we’re really glad to see more people paying attention to where their food comes from.
It matters.
