Now let's get to some Trivia...

I know it looks like a Sfogliatelle, and honestly it's filled almost the exact same way... but it is filled with cream puff dough instead. It's a Lobster Tail. We slowly reintroduced this pastry back into the stores about a year ago after the Philadelphia Eagles had a special request for them. They are now available at all of our locations on a daily basis but in very controlled quantities so that we can maintain the quality. The Termini Team spent just under 48 total labor hours to set up, mix, fill and close all of the Lobster Tails on our production list.

Let's get to some Trivia.
October has arrived. At the bakery it means one thing... Ossi di morti (Dead Bones) are back. Every year we continue the Italian Tradition of celebrating All Soul's Day with making our Grandfather's original Sicilian recipe. We only make these one day a year and when they are gone they are gone until next October.

The process began early in the morning with Nick and Jaime carefully scaling each batch to prepare for the shop production. Each batch is cooked, mixed, then dumped on the work benches to cool so the hands team can carefully mold them in to shapes and figures. Once the "Bones" are formed they are placed on sheet pans and set aside to naturally dry out over a period of 4-5 days. Once dried the cookies are baked at a low temperature so the center becomes liquified to form a foot at the base of each. The bones are then cooled, dumped, and ready to be sold or shipped. The entire process of getting the bones from the scale to the sheet pans before they are dried took Team Termini just over a combined 55 labor hours.

Red October Fans... We are getting many calls about the Phillies Cupcakes. We will not Jinx our boys in Pinstripes. Every year, we start making our Red October Cupcakes at the start of the Divisional Series. We can not break with this tradition as we do not want to create bad JuJu. We know our Phillies are going to come through this week and the cupcakes will be in store and online this weekend.

Now let's get to some TRIVIA...

The process of making our Almond Horns is rather simple but as usual with all handmade products, very labor intensive. As with most refined pastry it all starts with the ingredients. In this case pure Almond Paste and Natural Sliced Almonds. Multiple 45 lb. buckets of almond paste are cut the day before production and kept covered in plastic tubs to soften the ingredient for mixing. Early in the morning the Termini Team carefully mixes each batch adding egg whites, confection sugar, and a few other flavors until it becomes a pliable dough for rolling. At 10:00 the entire pastry team begins to hand roll the dough in the natural almonds and shape each piece into a horn. Once formed the Almond Horns are frozen and packed by the packing team in boxes so we can bake and dip them fresh every morning for our other locations and our shipping department for our e-commerce customers. At the end of our day the team spent just over 40 hours to complete the project.
