first discovered Vitel Tonné (or Vitello Tonnato) in Italy in 2010 and fell in love with it. Originating in the Piedmont region of northern Italy, Vitello Tonnato dates back as far as the 18th century, when it began as a humble way to transform leftover veal into something extraordinary. Over time, it evolved into one of Italy’s most refined dishes: thinly sliced veal paired with a silky, savory sauce of tuna, capers, and anchovies.
Over time, the dish found its way to South America, particularly Argentina, where it is widely enjoyed as a traditional Christmas dish.
What makes Vitel Tonné truly remarkable is its unexpected combination: land meets sea. In a time when meat and fish were rarely served together, this pairing challenged tradition and created something entirely new and refreshing.
At Perle, we honor the history and evolution of Vitel Tonné by preparing our veal with care, slicing it delicately, and finishing it with a confit bluefin tuna tonnato sauce with egg yolks, anchovies, Dijon, lemon, and olive oil, that balances richness with brightness, creating a dish that feels both timeless and modern.
