🍛🔥 THE CURRY CHICKEN EVERYBODY KEEPS ASKING FOR! 🔥🍛

Juicy, tender chicken marinated in fresh green seasoning, then slow-simmered in a rich, golden curry sauce packed with island herbs, turmeric, garlic, thyme, and just the right amount of heat. Every bite is loaded with bold Caribbean flavor that will have you reaching for seconds! 🤤🔥
🛒 INGREDIENTS
🍗 Chicken:• 4 lbs chicken pieces• ½ cup vinegar or juice of 1 large lime/lemon
🧂 Seasoning:• ½ cup green seasoning• 2 tsp salt• 1 tsp black pepper• ½ onion, chopped
🍛 Curry Base:• 4 tbsp oil• 4 tbsp curry powder• 2 tsp turmeric• ¼ onion, chopped• Hot pepper, chopped (optional)• ½ cup water
🌿 Green Seasoning:• 2 scallions• 4 pimento peppers• Hot pepper to taste• 2 heads garlic• 10 leaves culantro or cilantro• 6 sprigs thyme• 6 sprigs parsley or cilantro
👨🏾🍳HOW TO MAKE IT
1️⃣ Cut chicken into small pieces and wash thoroughly with vinegar or lime water. Drain well.
2️⃣ Remove excess skin and clean the chicken thoroughly.
3️⃣ Blend scallions, pimento peppers, hot pepper, garlic, culantro, thyme, and parsley until smooth to create your green seasoning.
4️⃣ Season chicken with green seasoning, chopped onion, salt, and black pepper.
5️⃣ Cover and marinate for at least 30 minutes (overnight is even better for maximum flavor).
6️⃣ Heat oil in a heavy-bottom pot or Dutch oven over high heat.
7️⃣ Add chopped onions and hot pepper. Sauté until lightly browned.
8️⃣ Stir in curry powder, turmeric, 1 teaspoon green seasoning, and water.
9️⃣ Cook while stirring continuously for 2–3 minutes until the curry becomes fragrant and slightly grainy. This step is what Trinis call "burning the curry."
🔟 Add the seasoned chicken and toss until every piece is coated in the curry mixture.
1️⃣1️⃣ Cook uncovered on high heat for about 10 minutes to build deep flavor.
1️⃣2️⃣ Cover, reduce heat to low, and simmer for approximately 40 minutes until the chicken is fork-tender and the sauce thickens.
1️⃣3️⃣ Stir occasionally to prevent sticking. Add a splash of water if needed.
1️⃣4️⃣ Taste and adjust salt to your preference.
1️⃣5️⃣ Garnish with fresh culantro or parsley and serve hot.
