A bit more about coffee seeds... The main photo here shows green Kenya Gatugi soaked in water to stimulate the emergence of the embryonic plant. It is cut longitudinally, and sort of shows how the embryo emerges from a layer in the seed endosperm, which often appears slightly darker in macro images.
