In solidarity with our staff, neighborhood, community, and the Twin Cities, we will be closed tomorrow (January 23rd) at both our Northeast Minneapolis and St. Paul locations. We will be observing the Statewide Shutdown with no work, no school, no shopping, and no dining out. As a small business, closing on a Friday in the middle of winter is difficult, so please consider stopping by another time in these upcoming weeks to support our business, our employees, and our families.

We deeply appreciate all of the community’s support we have received thus far during these difficult times, and we hope to see you in soon. Stay safe and take care of one another. Cuídense.

• St. Paul: Doors remain locked — please knock or wave and we will gladly let you in.
• NE Minneapolis: We continue to monitor and manage the front door during regular business hours.

We are incredibly thankful for the overwhelming support we have received from both the St. Paul and NE communities. Without your continued encouragement, patience, and loyalty, we would not be where we are today. Your generosity and kindness truly mean more to us than words can express.

Because of the strong support from our community, wait times for dine-in and takeout may be longer than usual. While this is a good problem to have, we sincerely appreciate your patience and understanding as our team works as hard as possible to serve every guest with care.

Seventeen years ago, we opened Chimborazo on the corner of 29th and Central Avenue in Northeast Minneapolis, carrying recipes from home and a hope that food could create connection. What started as a family dream grew because this neighborhood welcomed us, supported us, and made room for us.

Two years ago, we brought that same spirit to 508 Lexington Parkway in St. Paul, inside the Trader Joe’s complex—another table, another chance to gather, another community to be part of.

Chimborazo has always been about more than food. It’s about where we come from, what we’ve endured, and how we care for one another. It’s about sitting close, listening, and finding comfort in something warm when the world feels heavy.

And right now, it does feel heavy. There is fear, grief, and uncertainty around us. But we also see generosity. We see neighbors showing up. We see people choosing kindness, even when it’s hard.

Our restaurants remain places of welcome—where you can slow down, be nourished, and feel held by community, even briefly. Sharing a meal has always been our way of saying: you are not alone.

Thank you for standing with us, for supporting local restaurants and small businesses, and for caring for these neighborhoods we all call home.

We would like to sincerely thank each and every one of you for standing with us and supporting Chimborazo during these challenging times. Because of you, we have seen record numbers at both of our locations and continue to stay strong. With our community by our side, we are protected by something powerful—a support system that cannot be shaken.

Although our wait times have increased, we remain committed to keeping our doors open and continuing to serve you with care and gratitude.

For your awareness:
• St. Paul location: The door is currently kept locked. Please knock or wave, and we will be happy to open the door for you.
• Northeast Minneapolis location: A team member is stationed at the door to welcome and greet you as you arrive.

We truly appreciate every single guest who has checked in on us, ordered through Clover, DoorDash, or Uber Eats, and dined with us at either location. Your support means more than we can express.
